Then add an insulation layer over it above which steel trusses can be installed easily.

Many systems are designed to move air only so far so adding another story may mean you have to resize other parts of your mechanicals.
Take care if there are any electrical outlets in the soffit.
Clean the roof with a push broom and remove or pound in any remaining fasteners.
Attic trusses have a rectangular shape inside each truss.
